Method
Cooking the Pasta
- In a large pot, bring 1 liter of water to a boil. Add 1 tablespoon of salt.
- Add 400 grams of spaghetti and cook according to package instructions until al dente.
Preparing the Sauce
- In a pan over medium heat, combine 1/2 cup of olive oil and add the finely sliced garlic.
- Sauté the garlic until it is golden brown, being careful not to burn it.
- Add 1 teaspoon of red pepper flakes to the pan and stir for about 30 seconds.
Combining
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained spaghetti to the pan with the garlic oil. Toss to coat.
- If the pasta is too dry, add a little reserved pasta water until the desired consistency is achieved.
Serving
- Remove from heat, stir in chopped parsley, and serve immediately.
- Optional: Top with grated Parmesan cheese.
Notes
For an extra kick, add more red pepper flakes. This dish is best served fresh.
