Spaghetti Aglio e Olio

Ingredients
  

For the Pasta
  • 400 grams spaghetti Use quality spaghetti for best results.
  • 1 liter water For boiling the pasta.
  • 1 tablespoon salt To season the boiling water.
For the Sauce
  • 6 cloves garlic Finely sliced.
  • 1/2 cup olive oil Extra virgin for flavor.
  • 1 teaspoon red pepper flakes Adjust to taste.
  • 1/4 cup fresh parsley Chopped, for garnish.

Method
 

Cooking the Pasta
  1. In a large pot, bring 1 liter of water to a boil. Add 1 tablespoon of salt.
  2. Add 400 grams of spaghetti and cook according to package instructions until al dente.
Preparing the Sauce
  1. In a pan over medium heat, combine 1/2 cup of olive oil and add the finely sliced garlic.
  2. Sauté the garlic until it is golden brown, being careful not to burn it.
  3. Add 1 teaspoon of red pepper flakes to the pan and stir for about 30 seconds.
Combining
  1. Once the spaghetti is cooked, reserve 1/2 cup of pasta water and drain the rest.
  2. Add the drained spaghetti to the pan with the garlic oil. Toss to coat.
  3. If the pasta is too dry, add a little reserved pasta water until the desired consistency is achieved.
Serving
  1. Remove from heat, stir in chopped parsley, and serve immediately.
  2. Optional: Top with grated Parmesan cheese.

Notes

For an extra kick, add more red pepper flakes. This dish is best served fresh.
