Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment.
- Make sure the butter and egg are at room temperature for smooth mixing.
Mixing
- Whisk together the flour, baking soda, salt, and cocoa powder in a bowl until even. Set aside.
- Beat the butter and sugar together until light and fluffy.
- Add in the egg, red food coloring, and vanilla, mixing until the color and texture are smooth.
- Gradually add the dry ingredients, stirring just until combined.
- Fold in the white chocolate chips.
Baking
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them evenly.
- Bake for 10 to 12 minutes or until the edges are set.
- Let the cookies cool for a few minutes on the sheet, then transfer to a wire rack to finish cooling.
Notes
For thicker cookies, chill the dough for 15 to 30 minutes before baking. Serve with cold milk or brewed coffee.
