Preparation
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together the cake mix, eggs, oil, and vanilla until smooth, stopping when the dough holds together.
- Scoop tablespoon-sized portions and form them into smooth balls.
- Roll each ball in powdered sugar until well coated.
- Place cookies 2 inches apart on the baking sheet and bake for 10–12 minutes, until edges are set and centers remain soft.
- Let cookies rest on the sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use room-temperature eggs for better mixing. Measure cake mix loosely to keep texture light. Check cookies at 10 minutes to ensure soft centers.
