Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk Can use almond milk or other alternatives.
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
Optional Toppings
  • maple syrup For serving.
  • fresh fruit For serving.
  • powdered sugar For serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed. Be careful not to overmix.
  5. Fill each mini muffin cup about 2/3 full with the batter.
Baking
  1. Bake in the oven for 10-12 minutes, or until they are golden and a toothpick comes out clean.
  2. Let them cool slightly before removing them from the pan.
Serving
  1. Serve warm with your favorite toppings.

Notes

Avoid overmixing the batter; it’s okay if there are a few lumps. For extra flavor, consider adding chocolate chips or blueberries to the batter before baking. Keep an eye on the baking time, as ovens may vary.
