Preparation
- Warm a large skillet over medium-high heat with one tablespoon of olive oil until it shimmers.
- Toss steak bites with garlic powder, onion powder, salt, and pepper. Add steak in a single layer and sear for 2–3 minutes until browned. Remove from skillet and set aside.
Cooking
- Add the second tablespoon of oil to the same skillet and sauté cherry tomatoes for about two minutes until they soften.
- Stir in baby spinach and cook for one to two minutes until wilted.
- Pour in beef broth and bring to a simmer. Add tortellini and cook to al dente according to package timing.
- Return steak to the skillet and stir in grated Parmesan until melted. Taste and adjust salt and pepper, then remove from heat.
Notes
Dry the steak before searing for best results. Don’t crowd the pan when searing. Use hot broth to speed up cooking time. Grate fresh Parmesan for better melting. Always taste and adjust seasonings before serving.
