Method
 

Preparation
  1. Pat the chicken dry and cut into even pieces. Chop the peppers, onion, and garlic so they cook evenly.
Cooking
  1. Toss the chicken with salt, pepper, and oregano. Heat oil in a pan and sear the chicken until golden and almost cooked through.
  2. Add a bit more oil if needed, then cook onion and garlic until soft. Add peppers and cook briefly to keep them crisp.
  3. Return the chicken to the pan and toss with the vegetables. Cook one to two minutes more until the chicken is cooked through and flavors meld.
  4. Squeeze lemon juice over the mixture, stir in olives, and sprinkle with feta. Remove from heat and serve immediately.

Notes

Cut chicken and veggies the same size for uniform cooking. Use medium-high heat to sear without steaming the meat. Cook in batches if the pan is crowded to keep a good sear. Check salt and pepper before serving to balance flavors. A quick rest before serving helps flavors settle.
