Preparation
- Whisk together flour, cocoa, baking powder, baking soda, and salt. Set aside.
- Beat softened butter with granulated sugar until light and pale. Stop once the texture looks smooth.
- Beat in the egg, food coloring, vanilla, and almond extract until well combined.
- Add the dry mix slowly to the wet mix, stirring gently until just combined.
Chilling
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least two hours.
Baking
- Preheat oven to 350°F (175°C).
- Roll dough to 1/4 inch thick, cut shapes, and bake for 8-10 minutes.
- Cool on racks and dust with powdered sugar if desired.
Notes
Use room temperature butter for even creaming. Ensure dough is chilled well to maintain shapes during baking.
