Ingredients
  

For the Strawberries
  • 18-24 pieces large strawberries Use ripe strawberries for the best flavor.
For the Cheesecake Filling
  • 1 cup heavy whipping cream
  • 1 package cream cheese (8-ounce, softened) Low-fat cream cheese can be used, but texture may vary.
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice Optional.
  • 1/2 cup graham cracker crumbs Use gluten-free graham crackers for a gluten-free version.

Method
 

Preparation
  1. Cut off the stems of each strawberry and slice them in half from top to bottom. Cut a small piece off the back of each half so they can stand upright. Use a small melon baller to hollow out a bit of the center.
  2. In a medium-sized mixing bowl, beat the heavy whipping cream until stiff peaks form, about 5 minutes.
  3. In another bowl, mix the softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice using an electric mixer until smooth.
  4. Gently fold the whipped cream into the cream cheese mixture until well combined but don't overmix.
  5. Fill a piping bag with the cream cheese mixture and pipe the filling into each strawberry half.
  6. Sprinkle graham cracker crumbs on top of each filled strawberry.
  7. Serve cold and enjoy!

Notes

Chill strawberries before filling for extra freshness. Serve with extra graham cracker crumbs and fresh mint leaves for garnish.
