Preparation
- Cut off the stems of each strawberry and slice them in half from top to bottom. Cut a small piece off the back of each half so they can stand upright. Use a small melon baller to hollow out a bit of the center.
- In a medium-sized mixing bowl, beat the heavy whipping cream until stiff peaks form, about 5 minutes.
- In another bowl, mix the softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice using an electric mixer until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined but don't overmix.
- Fill a piping bag with the cream cheese mixture and pipe the filling into each strawberry half.
- Sprinkle graham cracker crumbs on top of each filled strawberry.
- Serve cold and enjoy!
Notes
Chill strawberries before filling for extra freshness. Serve with extra graham cracker crumbs and fresh mint leaves for garnish.
