Ingredients

For the chicken marinade
  • 1 pound boneless chicken breasts Use boneless for easy slicing.
  • 2 tablespoons olive oil Helps coat the chicken and promotes browning.
  • 2 tablespoons lime juice Adds bright acidity and tenderizes the meat.
  • 3 cloves minced garlic Provides a savory base flavor.
  • 1 teaspoon cumin Gives a warm, earthy note.
  • 1 teaspoon chili powder Adds mild heat and color.
  • 1 teaspoon salt Enhances all flavors.
For assembly
  • 8 small corn tortillas Warm before serving.
  • diced onion For topping.
  • chopped cilantro For topping.
  • lime wedges For squeezing over the tacos.

Method

Marinating the chicken
  1. Mix olive oil, lime juice, garlic, cumin, chili powder, and salt in a bowl.
  2. Coat the chicken in the marinade and chill for at least 30 minutes.
Cooking the chicken
  1. Preheat the grill or skillet to medium-high heat.
  2. Place the marinated chicken on the hot surface and cook until the internal juices run clear and there is no pink remaining, flipping once.
Finishing touches
  1. Let the chicken rest for a few minutes, then slice or chop into bite-sized pieces.
  2. Warm corn tortillas briefly on the grill or skillet.
  3. Fill tortillas with chicken and top with diced onion, chopped cilantro, and a squeeze of lime.

Notes

Use room-temperature chicken for even cooking. Do not skip resting the chicken to keep it juicy. High heat is essential for a proper sear. Warm the tortillas well to prevent tearing.
