Chicken Enchiladas

Ingredients
  

For the filling
  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 1 cup cheddar cheese Shredded.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 1 teaspoon cumin For flavor.
  • 1 teaspoon chili powder Adjust to taste.
For the sauce
  • 1 can enchilada sauce Store-bought or homemade.
For assembly
  • 8 large tortillas Corn or flour tortillas work.
  • 1 cup additional cheddar cheese For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the shredded chicken, cheddar cheese, sour cream, cumin, and chili powder.
Assembly
  1. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  2. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  3. Pour the remaining enchilada sauce over the top and sprinkle with additional cheddar cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.

Notes

Serve with additional sour cream and salsa. Can be frozen before baking for later use.
