Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the shredded chicken, cheddar cheese, sour cream, cumin, and chili powder.
Assembly
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with additional cheddar cheese.
Baking
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
Notes
Serve with additional sour cream and salsa. Can be frozen before baking for later use.
