Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch dish.
- In a mixing bowl, whisk the cottage cheese, eggs, honey or syrup, vanilla, cinnamon, and salt until smooth.
- Stir in the rolled oats and milk until combined, then let the mixture sit for 5 minutes.
- Fold in the blueberries gently.
- Pour the batter into the greased dish and smooth the top.
Baking
- Bake for approximately 40 minutes or until golden brown and a toothpick comes out clean.
- Cool for 5 to 10 minutes before slicing and serving.
Notes
Use room-temperature eggs for better mixing. Ensure not to overmix to keep the texture tender. You can prepare it ahead of time and refrigerate it overnight.
