  • 200 grams Feta cheese Use fresh, high-quality feta for the best flavor.
  • 4 large Eggs
  • 300 grams Cherry tomatoes
  • 200 grams Spinach
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 1 clove Garlic (optional) Minced, for extra flavor.
  • 1 teaspoon Herbs (optional, such as oregano or basil) Add for additional flavor.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, add the cherry tomatoes and spinach.
  3. Crumble the feta cheese over the vegetables.
  4. Create small wells in the mixture and crack the eggs into these wells.
  5. Drizzle with olive oil and season with salt, pepper, and any optional herbs or garlic.
Cooking
  1. Bake for about 15-20 minutes, or until the eggs are set to your liking.
  2. Serve warm with crusty bread.

Notes

This dish is best enjoyed warm right out of the oven. You can complement it with a side of fresh salad or avocado slices for added nutrition. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, place in the oven at a low temperature until warmed through. Avoid microwaving, as it might make the eggs tough.
